
Whenever I make this banana bread recipe, my kids think I spent all day sweating over the oven. Truth is, it takes less than ten minutes to prepare and an hour to bake. It’s a super easy recipe to whip together. I spread out the mixture in 3 12-inch bread pans.
Ingredients:
4 cups of smashed bananas (Overripe bananas are best)
4 eggs
1 cup of melted butter
1 teaspoon vanilla extract
4 cups of all-purpose flour
2 teaspoons of baking soda
1 ½ cups of light brown sugar
½ teaspoon salt
Optional: Add as many chocolate chips as you like. I eyeball the mixture and add however I’m feeling at the moment.
Directions:
- Preheat oven to 350 degrees.
- Mash the bananas in a mixing bowl.
- Beat eggs and add them to the mashed bananas.
- Melt butter and pour into the mixing bowl.
- Add the rest of the ingredients to the mix.
- Mix well.
- Place in oven and cook for 60 minutes.
I was inspired to share my recipe this morning. I woke up at 5:30 to begin and decided to make my kids a yummy breakfast to start off their week. I had a bunch of mush bananas, because my kids decided for some reason to overlook the bananas. My house smelled like love before the kiddos woke up and they were greeted with a delicious breakfast.
